DIY - Seasoning Spice Jars



It's aaaaaa' spicy meeeataaaballl! Ok, maybe not. These little jars of joy are actually home crafted seasonings. Jerk, BBQ and Cajun. Good right? 



They were a little DIY gift for my super special pal. The dude loves chicken, and when he's actually home and has a bit of time to play with, he likes to rustle up some right tastey shiz. 

But ya see the thing with seasoning is that though the little pot marked 'cajun' you grabbed off Sainsbury's spice rack a while back is tasty, it's not as full of flavour as it could be. It's not got the laaaayers. (DONKEY!)  Each of these seasonings has a number of spices that, when combined in just the right quantities, get all sexy with each other on a bunch of levels and create a down right naughty array of wickedness in your pie hole!

These 'recipes', if you can call them that, are an accumulation of various ones I found on the net that I mashed together to get the kind of flavours I was after. The jars I found in Wilco for a few quid each and the little tags I made with a trusted label maker and some crafty bits and bobs. 
YAY! Get miiiiiixing pals!












JERK

1/4 cup light brown sugar
1 tbsp all spice
2 tsp sea salt
1 tsp ground black pepper
1 tsp red pepper flakes
1/4 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground cumin




BBQ

2 tbsp chilli powder
2 tbsp sea salt
2 tbsp brown sugar
1 tbsp smoky paprika
1 tbsp dried thyme
2 tsp garlic powder
1 tsp ground cumin
1/2 tsp ground black pepper




CAJUN

2 tbsp garlic powder
2 tbsp and a bit (about 1 tsp) paprika
1 & 1/2 tbsp sea salt
1 tbsp cayenne pepper
1 tbsp ground black pepper
1 tbsp onion powder
1 tbsp dried thyme
1 tbsp dried oregano
1 tsp red pepper flakes

  1. Of course now my weekend will be dedicated to making my own spice mixes. I love mixing my own things (must be the chemist side of me) and I embrace any opportunity that allows me to use my label maker. Your recipes are always amazing Janna! When are you gonna come to stinky South America (it's not really stinky) so we can cook some shiz together.

    2. Yup, we need this to happen. There is this awesome spice here in Chile that is a smokey/spicy/all kinds of awesome chili powder called Merkén that is amazing. You would love it!

  2. Jannaaa, does it have to be sea salt? Or does regular table salt work as well?

    1. You could use table salt but I would use less as the flavour can be overpowering in comparison to sea salt. x

    But seriously, the BBQ-one….yummy…I do really need to try it. And the packaging, labelling, it’s a treat for the eyes, so so beautiful!
    I looooooove Mexican food but never tried to make the spices myself, any advice on how I can improve Chili con/sin carne , Guacamole, Salsa, Burritos, anything?

    1. Oh my lord. I loooove Mexican too. I've never really attempted it at home though. Nothing outside of an boxed Taco / Fajita kit anyway. I'll look into it for sure! I know that Guacamole is something that I've seen a bunch of my favs chat about though...
